Mangalore Mutton Curry:

Ingredients:
1. Red long chillies - 25 roasted
2.Red short chillies - 10 roasted
3. Onion 1
4. Coriander seeds- 1tbsp
5. Tamarind extract – ¼ cup
6. Garlic cloves6- 7 crushed
7. Cumin seeds- ½ tsp
8. Ginger ½ inch grated
9. Cinnamon- 2 pieces
10.Cloves- 4-5
11. Curry leaves
12.Mutton- 1 kg
13.Tomatoes- 4 chopped
14.Turmeric powder- ½ tsp
15.Salt to taste
16.Onions- 2  
17.Fresh grated coconut milk – 2cups


Heat 1 tbsp of oil in pan and roast all the ingredients from 1-11 for the masala powder till they are light brown and powder it in a blender. Keep aside
In a cooker take about 2 tbsp of oil add the mutton pieces, onions and tomatoes and stir well. After the meat turns light brown add the turmeric powder, salt and add the masalas and coconut milk and pressure cook till the meat is done.
Once the meat is cooked leave the lid open and cook for an extra 10 mins and garnish with coriander.
